21319841562_chili-pre-cooked-incrockpot-lidoff.jpgIn Australia eating outdoors or ‘alfresco’ is the norm. They have the ideal climate most of the year but there is no reason why we shouldn’t all dine outside.

It makes eating fun for the kids, brings families together and makes meal times more of an event than something that needs to be done.

Barbecues, picnics, self service salads, finger buffets some of the favourites but why not eat your breakfast outside, especially on a lovely summers morning.

The first thing to consider of course must be the weather, some of us are lucky enough to have a quite consistent climate while others might have the risk of getting a bit wet.

Umbrellas and canopies come in hundreds of different types, shapes and sizes, permanent or removable to protect against the rain or the sun.

Decide where you want to create an outdoor area.

One of the best parts about nice weather is the ability to dine outdoors. When the sun shines it seems nobody ever wants to go inside, and can you blame them? It seems a real shame to miss out on even one moment of good weather.First choose where to put it, depends on the size and shape of your garden. Close to the house on a patio where you can fit a retractable canopy or awning or in the middle of the garden on the grass with a paving stone path to it so fewer spills happen when carrying your food to the table. Maybe tucked into a special corner of the garden surrounded by bamboo or wooden screens or trellis with plants growing up them; very pretty.

Decide on the feel you want, romantic in an enclosed area surrounded by sweet smelling shrubs or open with plenty space for the kids to run around and open to all who want to join in.

Next what to cook your food on. The free-standing barbie of which there are many styles either charcoal or gas, cheating a bit but so much cleaner.

A brick or block barbeque are quite simple to build and is then a permanent feature and why not build in a small sink and bar area, almost like an outdoor kitchen and save the hassle of carrying the dirty dishes in to wash.

Then finally, somewhere to sit while you enjoy all that lovely food.
If you have built your cooking area why not extend it around and build benches on both sides and put brightly coloured cushion seats and backrests. A wooden gazebo over the top and you have the perfect barbeque area.

A space heater for the chillier evenings and you are ready to go, prepared for any thing.

If you are not wanting anything so permanent. Most garden centres have many ranges in patio furniture, tables and chair sets in either wood or cast iron, wooden bench sets. Hammocks and swings to lounge around on after the feast.

Truffles in Cooking

11319841691_22209rosemaryyeastrolls4.jpgTruffles have been considered a delicacy by gourmets for many years.  As such, these highly sought after and hugely expensive items need to be used properly in order to get as much flavour as possible, without damaging the flavour of the entire dish or making the truffle taste too light for the dish.  Careful attention to the details of execution in preparation should be paid in order to use these little spores properly in your recipes.

It is important to remember that we eat not only with our mouths, but also with our nose.  In fact, the olfactory senses are far more acute than are our taste buds.  Therefore, it is paramount to utilize the ingredients in such a way as to accentuate the aromatic qualities of the truffles.  Whether you use white truffles or black truffles it is paramount to plan your meal and recipes accordingly.

A Festival of Truffles

Truffles, Those rare funguses sniffed out in deciduous European forests by hounds or pigs are coveted by many and afforded by few. They are celebrated in Michelin starred restaurants the world over, so to introduce the less wealthy, but equally curious gastronome to the delights of the much-esteemed tuber, festivals of truffles are celebrated across the globe for everyone to enjoy. History of the Truffle

Religious Festivals and rituals are a symbol of thanksgiving and appreciation to the Gods in every religion across the world. Hindu’s rejoice in Diwali, a festival of lights, Muslims commemorate the end of fasting during Eid ul-Fitr and Sikhs celebrate Vaisakhi an ancient harvest festival. Buy your favorite truffles online

In a perfect world, you would have a prize “truffling pig” and an ancient forest in your backyard, so that you could forage for fresh fungal treats to your heart’s content. In the real world, you have your specialty green grocer, who has black and white truffles available according to their proper seasons, and who probably arranges to have them flown-in from France and Italy every few days.

Your recipe should tell you what to do with the truffles in order to achieve the best combination of taste and aroma.  However, one should note that because of their unique flavour profile, the other ingredients in the recipe must also be of a high quality in order to accentuate their flavour not overwhelm the truffles.  These other ingredients are to play a supporting role in the dish, rather than to take center stage.

Foods that are high in fat content tend to work well with the earthy taste of truffles.  Things like cheese, butter, foie gras, eggs, and cream all tend to help accentuate both the aroma and flavour of the spores.  Other fats can also be used, things like olive oil, canola oil, and even animal fats rendered from meat.  Pork fat tends to work very well with truffles, but one must take care to use unsmoked and uncured animal fats.  Things like bacon, ham, and prosciutto tend to have very strong flavour and can mask or hide the subtleties of the truffles in your recipe.

Because of the expense and the strength of truffles, they are typically sliced very thin before use.  This helps to maximize the surface area of the truffle and allows the taste buds to fully realize the flavour they possess.

It can be difficult to find a good source for truffles, but in some cases you can find a good store from which to buy truffle online.  Make sure you understand their shipping policies as well as their freshness guarantees.  Fresh truffles are the best, but you can use fresh truffles for up to three or even four days.  Realize that the longer you store the truffles, the less flavour they will contain with each passing day.

Another good pairing for truffles is pasta and sauce.  However, one should take care to not include the truffles in the cooking process of the pasta or the sauce.  Most sauces for pastas tend to be heavily seasoned and could overshadow the truffle if it were to be used in the cooking process.  This is true of both tomato based red sauces and white cream sauces.  The best way to use truffles in this fashion is to shave them thin over the top of the finished pasta and sauce dish.
